Before achieving a celebrity status
During the early years of his career, David Bouley worked at a number of restaurants in Santa Fe, Cape Cod, New Mexico, and then later on relocated to France and Switzerland. After completing his studies in Europe, David got the chance to work with experienced chefs like Roger Verge, Joel Robuchon, Paul Bocuse & Fredy Girardet.
Return to New York City
This experience gave David Bouley a considerable amount of confidence, which prompted him to return to New York City to offer his services at popular restaurants like La Cote Basque, Le Perigord and Le Cirque. David also took the opportunity to work for some time at Roger Verge’s restaurant in San Francisco.
The Path to success
David Bouley joined a new restaurant (Montrachet) in TriBeCa, which opened in 1985. He worked there as the lead chef. That restaurant quickly came into the public’s attention and was awarded the 3 star review in ‘The New York Times’.
This success led David to try his hand at opening up his own restaurant, and in 1987 he started ‘Bouley’, located in Tribeca close to Duane Park.
Public image and recognition
Zagat survey, a restaurant rating reviewer service, asked its 7000 plus diners the question of where would they want to eat the last meal of their life. The overwhelming response was at Bouley’s.
After the September 11 tragedy, David Bouley intitiated a plan to feed the rescue workers at Ground Zero. That earned him a lot of respect in the public’s eyes.
The Bouley restaurant was awarded three stars (exceptional quality, worth a journey) by the Michelin ratings community. Later on, Bouley launched a new restaurant and named it Brushstroke, specializing in Japanese culture and their food with a mixture of American flavor. David also has a private learning center for aspiring chefs, called the Test Kitchen.
Many visiting guests from all across US come and visit this place to test out and develop new recipes under the supervision of Bouley himself.
